Quick notes:

  • The proper rib cut is the St. Louis style cut.
  • The basic rub recipe is 8 parts brown sugar, 3 parts salt, 1 part chili powder, 1 part other (suggested equal parts black pepper, cayenne, jalapeno seasoning, old bay, dried time, and onion powder).
  • The 4 ounces of wood chips being called for should measure to 1.25 cups.
